Sorry for the break in posts, I’ve been on vacation, eating all the things. Now on with the show!
So I joined a CSA this summer with my lovely girlfriend (read: she signed up and I am grateful for the influx of fresh ingredients), and in the first couple weeks I got a lot of beets. I only need so many pickled beets, so I made this gratin. And that was a really good idea. In fact, I think I’m getting more beets today, so maybe another one of these is in the works for me…
